Nutty Rice Salad
Ingredients (serves 5)
1 cup brown rice
1/3 cup raisins
1 cup almonds - roasted
3 dsp sunflower seeds
1/2 cup whole sweetcorn kernels4
1/2 dsp parsley - chopped1 stalk celery - dicedDressing
1/8 cup unsaturated oil
1 dsp soya sauce
1 clove garlic - crushedcurry powder and pepper to taste
Method
Cook rice in 1/3 cup water.
Transfer to bowl.
While rice is still warm, mix in remaining ingredients and dressing.
Toss thoroughly.
Serve warm or cold as desired.
Useful tips:
Roast nuts and seeds in a single layer on a shallow tray.
Shake tray occasionally to ensure even browning.
Keep dried fruit like raisins in an airtight container in a cool, dry place.
Add some orange or lemon peel to prevent fruit from drying up.
